Ippudo
When your Achilles heel is a steaming bowl of tonkotsu broth, pork loin chasu and chewy house-made noodles, Ippudo is your second home. This Japanese gem founded in 1985 in Fukuoka is best known for its signature ramen, Shiromaru Motoaji, a silky pork broth that’s cooked for 18 hours using a “double maturation process”, which adds several layers of depth to its flavour.
